Meal Planning for People Who Hate Meal Planning

Every Sunday: a crisp meal plan. Breakfasts, lunches, dinners mapped out for the week. By Wednesday, it’s in the trash because you had a late meeting, or someone brought donuts, or you just really didn’t feel like chicken again.

Sound familiar? The problem isn’t you. It’s the plan.

Why Rigid Meal Plans Fail

Most meal plans are built around ideal conditions that don’t exist: you’ll always have time to cook, you’ll always want what you planned, nothing will come up. That’s not a real week. That’s a fantasy week.

When the plan doesn’t match reality, the whole thing collapses — and people blame themselves for “failing” instead of recognizing that the system was too fragile.

Build a Framework, Not a Schedule

The shift that actually works: stop planning exact meals and start planning components.

Instead of “Monday: grilled salmon with roasted broccoli and brown rice,” plan for:

  • A protein you’ll cook in batch (a pack of chicken thighs, a can of chickpeas)
  • Two to three vegetables you’ll prep at the start of the week
  • A grain or starch that stores easily

From those components, you can build dozens of different meals depending on how much time and energy you have. Same prep, way more flexibility.

The “Two Anchors” Approach

If even that feels like too much, try anchoring just two meals per week — the ones you know tend to fall apart (usually weeknight dinners). Plan specifically for those. Let the rest of the week be more spontaneous.

Two reliable dinners per week is dramatically better than seven planned and three actually executed.

Start Smaller Than You Think You Should

Most people try to overhaul everything at once. What actually works is starting with one small change — maybe that’s just making sure there’s always a cooked grain in the fridge — and building from there.

The goal isn’t a perfect week. It’s a slightly better week, consistently.
